Crock Pot Chicken & Vegetable Soup

ImagePerfect for Sunday dinner and hearty. I found this recipe on pinterest but I changed it a bit. Turned out very tasty.

INGREDIENTS:

4 chicken breasts
4-5 carrots (small to medium size)
5-6 celery stalks (small to medium size)
1 zucchini
1 small white onion
1 can stewed tomatoes (undrained)
3 fresh roma tomatoes
1 can kidney beans (rinsed and drained)

SEASONINGS (to taste):
dried parsley, dried basil, dried oregano, herbed poultry, sea salt, onion powder, garlic powder, salt & pepper.

INSTRUCTIONS:

Place raw chicken breast at bottom of crock pot. Load chopped veggi’s on top of chicken, fill crock pot up with water just above vegetables & add seasonings. Cook on high for 3-5 hours. When done (you’ll know it’s done by how soft you want the carrots to be) shred chicken breasts & serve!

**You could add almost anything you want to this recipe. This is just what I had around. I was thinking maybe adding a bell pepper, spinach, kale, bacon and/or proccuto, potatoes (some day soon) etc. Also, a seasoned roast beef would be really good as well if you wanted a change from chicken.
