DELICIOUS PANCAKES THAT ARE GRAIN FREE REALLY DO EXIST!!! 

I have been “Paleo Baking” and the results are very discouraging. VERY.

Oh breakfast…so easy yet so hard for Mandy&Spencer. Mainly because we never eat it. Unless brunch at 2:00pm on Saturday’s counts?

Spencer is kind of in panic mode because he’s thinking, “breakfast? without bread or grain??” and i’m like “breakfast? without eggs??” although I should be giving them up because Dr. Geronimo says that may be the cause of my acne problems I have from time to time (what does he know? ha just kidding but really I’m already having withdrawals). But in all honesty whats breakfast without eggs and a side of toast? So I am tirelessly searching all over the internet for something, ANYTHING that does not have eggs and/or grains in, on or around it! sheesh.
Here is what I found. and the pickin’s are slim. Not that slim, I’m just not as creative:

Paleo Apple Crisp

Ingredients

  • 4 apples, cored and chopped
  • 1/2 cup orange juice
  • 3/4 cup pecan halves
  • 3/4 cup sliced walnuts
  • 3/4 cup golden raisins

Method

Put apples in an 8-inch square baking dish or 2-quart casserole dish. Drizzle with orange juice, toss until the fruit is coated and smooth the top. In a food processor, combine pecans, walnuts, golden raisins, ginger and cinnamon and pulse just until chopped. Spoon the nut mixture over the apple mixture and serve.

Paleo Bacon and Fruit Breakfast Scramble

Ingredients

  • 1 lb organic bacon in small pieces
  • 2 peaches, cut up in slices
  • 2 pears, sliced and cored
  • 1 apple, sliced and cored
  • 2 tsp cinnamon, or to taste

Method

After cutting up the bacon, cook it in a pan on a medium heat for a few minutes. The fat from the bacon will act as cooking oil/fat for this, so don’t worry about adding any of your own. When the bacon is cooked (but still soft) drain off a little of the fat and add in the chopped fruits. Mix them in with the bacon nicely. Allow everything to cook for around two minutes and stir regularly. Sprinkle and mix in the cinnamon and cook for one more minute.

We also bought the cranberry and the apple one. (I say we… but I mean I. I’m sneaky.)

But beware. See if you can find it in a local store before you buy online. Shipping is half of your child’s future college tuition. (Okay so for 3 bags of cereal it was $12) I don’t have too many resources in the state of Idaho. I called the most well stocked health foods store, and they didn’t have it. We have 2 or 3 smaller stores. Maybe I can convince one of them to start selling the product.

Or I can find a recipe that is similar. Duh!
