Fruit Crisp

So if you know me well you know that I love a good fruit pie. Cherry, apple, strawberry rhubarb, those are the best. So I found a really good recipe for paleo cherry crisp. This could work with any fruit and it was so delicious! I used frozen cherries that were thawed. Feels good having a serving of fruit for dessert. Try it. Youll see 🙂 http://www.ibreatheimhungry.com/2012/09/paleo-cherry-crisp_19.html#

Caramelized Coconut Chips

These were pretty tasty! From the book Well Fed, and the link to her website, The Clothes Make the Girl. In her cookbook, she uses 1/4 t. cinnamon. The kids really liked them, and so did I. I think they would be really amazing in trail mixes, recipes, or used as a garnish. Mmmm…

Steamed Mussels

Steamed Mussels

Picked up some fresh mussels from the market today and my my were they delish! Mussels are pretty cheap too, only $4 a pound so any seafood lovers out there this is a fast little meal that feels so indulgent! Recipes abound online. I steamed mine in a cup of white wine, 2 shallots, and 4 cloves garlic and a bay leaf. Just heat up the broth till its boiling, add mussels, cover and steam for 3/5 minutes and voila! Add some ghee to the broth and your fish spice of choice. The alcohol in the wine burns off but if you don’t like that you could always sub chicken broth.

Chicken and Kale Stir Fry

Mmmm….Instead of soy sauce for flavor the recipe calls for coconut aminos which is basically like coconut soy sauce essentially. Except it doesn’t taste like coconut. Pretty interesting and darn good.

A healthier gluten free version of chocolate chip cookies.

Avoid “gluten-free” mixes at the store that contain tapioca starch, potato starch, rice starch… anything starch. They raise your blood sugar higher than traditional gluten according the the “Wheat Belly” book.
